Recipe: Gluten-Free Carrot Cake Balls

Great tasting little pick me ups. Carrott cake balls are perfect for eating on the bike!

Making things at home that are healthy and easy to consume on the bike can be quite tricky, but these bite-sized, bike-friendly balls do just the job.

They will bring you back to life on a long ride and give you the same sweet tasting kick you would get from a slice of carrot cake (but without the guilt).

Ingredients

– 2 cups of cubed gluten-free bread

– 1 medium carrot (1/cup peeled and grated)

– 2 tablespoons of cream cheese

– 2 tablespoons of walnuts

– ½ a teaspoon of vanilla extract

– 1 tablespoon of sugar

– 1 teaspoon of cinnamon

– A dash of salt

Method

Place the bread into a food processor and pulse until you have an even, crumbly consistency.

Combine the remaining ingredients in the food processor and mix until you have a sticky mixture. Next, roll the mixture in your hands to create the bite-sized carrot cake balls.

Then, press them into an airtight storage container or wrap up the bites into the foil to keep them fresh!
