Recipe: Breakfast Blueberry Quinoa Parfait

A breakfast that looks and tastes like dessert...

This super healthy parfait takes minutes to prepare (after the cooked quinoa is left to cool) and is a very filling breakfast.

You can play around with the ingredients, using different types of fruits and nuts and you can also double up on the portions of fruit to help make sure you’re getting your daily intake of nutrients.

You’ll need:

  • 1 cup cooked quinoa
  • 2 cups water
  • 2 cups vanilla yoghurt
  • 2 cups blueberries
  • 1/4 cup pecans
  • 1 tablespoon of honey

Method

Bring 1 cup of quinoa to boil in a pan and simmer until all the water has absorbed. Leave to cool in the fridge.

Layer a line of quinoa, yoghurt, blueberries and pecans in a small bowl. Repeat until all the ingredients are used.

Drizzle with honey

Quinoa is packed full of protein, essential amino acids, iron and contains twice as much fibre as other grains.

Blueberries are the super berry of all berries. Research shows that they contain one of the highest antioxidant capacities among all fruits, vegetables, spices and seasonings.

Pecans are packed with valuable compounds that are effective in lowering cholesterol levels. They are also rich in oleic acid, which is the healthy fat found in olives and avocado.
