Recipe: Beacon Hill Cookies

TWC's favourite kind of cookie...

Beacon Hill cookies are TWC’s favourite kind of cookie, extremely light with a distinct chocolatey hazelnut flavour.

Each cookie is high in energy to keep you fuelled throughout the day and the batch can be made from scratch within 15 minutes!

Ingredients (for around 15 small cookies)
  • 100g 70 per cent dark chocolate
  • 2 egg whites
  • ½ tsp cream of tartar
  • 30g sugar
  • 50g cocoa powder
  • 50g chopped hazelnuts
  • ½ tsp vanilla extract
Method

Heat the oven to 180°C/Gas mark 4.

Melt the chocolate in the microwave.

In a large mixing bowl whisk together the egg whites and add in the cream of tartar and sugar.

Fold the cooled chocolate, chopped hazelnuts and vanilla and cocoa powder into the mixture.

Place baking parchment onto a baking tray and drop the mixture into small dollops using a teaspoon.

Bake for 15 minutes or until the tops of the cookies start to crack.

The healthy bit

Eating small amounts of dark chocolate regularly can help lower your blood pressure and improve your blood flow.

Hazelnuts are full of oleic acid, a good fat that helps to lower bad cholesterol. One cup of hazelnuts contains 86% of the recommended daily allowance of vitamin E.
