Recipe: Frozen Berry Yoghurt

Great for snacking on in the sun!

Perfect topped with extra fruit or frozen onto wooden dessert sticks, nothing says Summer more than this fruity treat. We’ve made this one with 0% fat yoghurt but have added a little sugar for extra sweetness.

Note: we found it very hard not to demolish the whole bowl in one go…

 

Ingredients:

  • 3 cups of frozen mixed fruit
  • 2 tablespoons of sugar (optional)
  • 1/2 cup of nonfat yogurt
  • 1 tablespoon fresh lemon juice

 

 

Method:

Using a food processor (or hand held mixer) mix all the ingredients until smooth and creamy.

Cover and freeze for 30 minutes to firm up slightly.

 

The healthy bit:

Berries of all types are rich in vitamin C and antioxidants. Frozen berries are just as good as fresh berries and maintain nutritional value for longer.

Yoghurt provides bone-building calcium in a dose as great as that from a glass of milk and eating yogurt regularly helps boost immune function.
