This meal is basically a superfood delight.
Sweet Potato is a high in fibre and fairly low GI – so will keep you full for longer than white potato, and it’s very high in Vitamin A, which maintains your immune system.
Sweet potato takes a little while in the oven – but my secret is to chop it up into slices and microwave it for about five minutes – which makes for amazing, chip like wedges. Alternatively, you can cook your potato in batches ready for the week.
Beetroot is high in nitrates and proven to improve endurance, and spinach contains plenty of Vitamin E, great for fighting inflammation.
