If you’re a vegetarian, halloumi is a great way to get your protein in. Made from goats, sheep or sometimes cows milk, it’s got a very high melting point, which means you can chop up a block of halloumi, and shallow fry it the same way you might tofu, or fish. It’s got a distinctive, salty taste, that will go just perfectly with some roasted courgettes and peppers in a pitta.
If you’re a vegan, then tofu, made form soy beans is a great alternative that works beautifully when fried with a little sweet chilli or soy sauce.
Both of these options will work well on skewers, too – but that seems a little high on the presentation time allowance for a post-training meal.
