Roasted Vegetable Frittata
Eggs don’t need to be omelette-ed, scrambled or poached – here at TWC we’re partial to a good Frittata to – and the addition of lots of vegetables, cheese and a little butter means that this treat is super filling.
We’ve got a detailed recipe here – but effectively you’re chopping whichever roasted veg you fancy, loading it into a baking tray and cooking at 200c (gas mark 6).
After 12 minutes of baking, you’ll pour in a mixture of egg, butter and a little bit of cheese, and watch it bubble until firm.
Our recipe uses 7 eggs and makes a large serving, so you can even save some for lunch the next day…
