Cheesy Potato Croquettes
A childhood favourite, these cheesy potato croquettes are great fun to make and taste incredible too. Perfect for enjoying as a snack or using as a side dish; this is an ideal way to use up those leftover roast spuds. Just mash the roasties -crispy bits and all-, mix in a handful of grated cheddar, season, and use your hands to form them into croquette cylinder shapes or balls. Next roll the croquettes in flour, then egg, and then breadcrumbs. Fry for 3-4 minutes in pre-heated oil or in a deep fat fryer.

Breakfast Hash Browns
Traditionally made with grated potato, we think leftover roast potatoes will add even more flavour to these hash browns. Mash the potatoes to the finest consistency you can manage and chop an onion into tiny pieces too. Add an egg to this mixture and season well. Then form the potato mix into hash brown shapes and shallow fry for two to three minutes on each side and you’re done – as simple as that.

Red Cabbage and Potato Hash
A tasty accompaniment to leftover Christmas ham or turkey, red cabbage and potato hash will easily use up any roast potatoes you have got going spare. Cut the roasties into smaller chunks and cut up a red cabbage into thin strips. In a frying pan with melted butter, mix the cabbage and potatoes together and serve once crispy. This dish goes great with a fried egg too.
