Roasted Vegetables Frittata
Leftover Christmas dinner vegetables tend to get thrown straight in the bin but there’s actually so much you can do with them. Take a roasted vegetable frittata for example, you can make this with whatever vegetables you have leftover – already cooked or still raw. Peppers, courgettes, aubergines and red onions may be the classic combo but there’s no reason why you couldn’t use parsnips, butter nut squash and broccoli instead.

Veggie Pasties
A vegetarian take on the traditional Cornish pasty, these are the perfect excuse for using up any leftover onions, carrots, swede, squash and other veggies you have going spare from your Christmas dinner. Buy ready made pastry or have fun with the kids and make your own, then fill with whichever veggies you like. You could even add in some chopped ham or shredded turkey too if you fancy a meaty version.

Bacon, Mushroom and Brussels Sprout Crumble
A sure fire way to get everyone eating their Brussels sprouts, this wintery crumble tastes a million times better than it sounds – trust us. All you need is some mushrooms, streaky bacon (leftover pigs in blankets, anyone?), double cream, mature cheddar, onion, garlic, nutmeg and the crumble topping and you’re all set. This dish can easily be used as a meal in itself or served with mashed potato and extra veggies.
