Ingredients
- 2 cups of gluten-free oats
- 1/2 a cup of ground flax seed
- 1 cup of chopped raw walnuts
- 3/4 of a cup of dried apricots
- 2 tbsp of sugar
- 2 teaspoons of ground cinnamon
- 2 large egg whites
- 1/2 a cup of honey
Method
Place the gluten free oats, flax seeds and walnuts into a deep baking tray and bake for 20 minutes in a preheated oven (325° F / 163° C).
Take the tray out of the oven and add the sugar and cinnamon to this mixture.
In a large mixing bowl, whisk the egg whites and honey together, then add in the oat mixture and, remaining ingredients. Stir this until everything is evenly distributed.
Then line the baking tray with baking paper, spread the mixture into the pan and pop it into the oven for 30-40 minutes. Keep an eye on it in case it starts to burn, but a golden coloured top is what you’re looking for.
Allow the bar to cool down before cutting into smaller prices and last but not least, enjoy!
