Recipe: Delicious Cherry Almond Butter Cookies

We’ve been working with the cherry experts, CMI Cheeries, to reveal the wonderful benefits of these little red fruit spheres.

We’ve jumped into the kitchen to bake up a storm with these healthy cherry power cookies.

You’ll Need…

Total Time: 25 minutes

These power cookies are healthy and delicious, but what makes them even better is that they are easy to make in no time.

INGREDIENTS

  • 43g Rolled oats
  • 1/2 Smooth mashed banana
  • 43g Chopped walnuts
  • 32g Dried Montmorency tart cherries
  • 2 tablespoons Pumpkin seeds
  • 2 tablespoons Cacao chips
  • 1 tablespoon Sesame seeds
  • 1/2 tablespoon Chia seeds
  • 1 1/2 tablespoons Creamy almond butter
  • 1 tablespoon Melted coconut oil
  • 1 tablespoon Maple syrup
  • 1 teaspoon Vanilla extract
  • Pinch of salt

Directions

Pre-heat the oven to 180 degrees Celsius and line a tray with baking paper.

This is a super faff-free recipe as you simply throw all the ingredients into a large mixing bowl, and then mix.

Once the mixture has been thoroughly blended and the ingredients are evenly spread, form small handfuls of dough into flattened discs onto the baking tray.

Firmly press the mixture down to pack in the ingredients, then pop the baking tray in the pre-heated oven for 15-18 mins.

Once the tops and edges have begun to brown, remove the cookies from the oven and place on a wire rack to cool.

Once cooled, store cookies in an air-tight container. Now you have tasty power cookies to keep you going through any ride and training session.
