These carrot and hummus wraps are great for if you are looking for something new and healthy to make for lunch and are extremely filling.
We made ours with homemade hummus, which only takes around 5 minutes to make and you can also try experimenting with adding different flavours, like chopped jalapenos, curry powder and red peppers. Adding some pepper or falafel is also another combination you can try out.
Ingredients (for 2 wraps)
- 2 wraps
- 1 large carrot
- ¼ red onion (optional)
- Rocket leaves
- 200g canned chickpeas
- 2 tbsp lemon juice
- 2 garlic cloves,
- 1 tsp ground cumin
- 100ml tahini (sesame seed paste)
- 4 tbsp water
- 2 tbsp extra virgin olive oil
- 1 tsp curry powder (optional)
Method
Add the chickpeas, lemon juice, tahini, water, olive oil, cumin and curry powder to a large mixing bowl and blend together until thick and smooth.
Grate the carrot and layer it into each wrap, along with the hummus, rocket and onion.
Put the remaining hummus into the fridge and eat within 4 days.

Carrots contain contain valuable amounts of antioxidant nutrients.
Fresh rocket contains good levels of vitamin C and folates.
