Recipe: Fiery Salsa and Tortilla Chips

It just tastes so much more better when it's homemade.

 

Great as a side with dinner or as a snack on its own, our salsa if we do say ourselves is pretty amazing. If you prefer, you could swap the tortilla chips for a side of pitta bread.

 

Ingredients

1 pepper

2 small corn on the cobs

2 chillies

Small handful of tomatoes

3 spring onions

Half a small red onion

2 tbsp of balsamic vinegar

Seasoning

 

 

Method

Grill the corn of the cobs for 10-15 minutes, until golden brown at the sides.

Chop up all the ingredients into a large bowl and season.

Add the cooked sweetcorn and drizzle with the balsamic vinegaer.

 

The healthy bit

Peppers are full of vitamins A, C, and K (red peppers especially) and have been found to reduce inflammation caused by arthritis and asthma.

Chillies are a great source of vitamin C, vitamin A and potassium, important in helping to control the heart rate and blood pressure.

Sweetcorn is a good source of fibre and is full of  antioxidant nutrients.

Tomatoes are full of antioxidants  and have been shown to help lower total cholesterol.
