This rich in protein frittata can be flavoured however you like, working well as a main side with dinner, or by itself as a light lunch and, is great for a vegetarian’s diet.
If you’re looking to add more protein to your diet, then this is a great way to start as we’ve loaded this frittata with 7 eggs! And there’s no need to heat it up the next day as it tastes just as a good as chilled pizza from the fridge does.
We’ve gone for a courgette and pepper based frittata, but other vegetables including spinach and some meats can also work well with this dish.
Ingredients:
- 1 small courgette
- 2 peppers
- 1 red onion
- 1/3 cup olive oil
- 2 garlic cloves
- 7 small eggs
- 1/2 cup cheese
- 1 tablespoon unsalted butter
Steps:
Preheat the oven to 200°C/Gas mark 6.
Place the chopped vegetables on a baking tray and drizzle with seasoning and oil. Bake for 12 minutes and remove from oven when done.
In a large bowl, whisk together the eggs, cheese and more seasoning.
In a baking dish, add the vegetables and pour the egg mixture over them and bake the frittata for 20 to 30 minutes, until puffed up and golden brown.

Eggs are rich in protein and contain all eight essential amino acids.
Courgettes are rich in nutrients, magnesium and potassium which help maintain good blood pressure.
Peppers are are full of vitamin A, C and K and have been found to reduce inflammation caused by arthritis and asthma.
