Ingredients
- 2 eggs
- 2 slices of smoked salmon
- 2 slices of brown bread
- A dash of vinegar
- Cracked black pepper
- Half an chopped avocado
- A handful of mushrooms
Method:
Heat up a little oil in a pan and gently start to fry the mushrooms.
Then boil some water in another pan, then turn down or remove from the heat, add the vinegar, and stir it vigorously to get a vortex going in the middle. Crack the egg into the vortex, and leave to cook for two minutes. Repeat this with the other egg shortly after.
Meanwhile, toast the brown bread, and add a smear of butter or spread if you fancy.
Layer the salmon slices and avocado over the brown bread.
Remove the eggs from the pan using a slotted spoon and pop onto the bread, over the salmon.
Take the mushrooms of the heat and pop them onto the side of your plate and enjoy!
