Recipe: Gluten-Free French Toast Squares

Just as nice as a slice of cake, but guilt free!

If you’re looking for a healthy sweet treat to have when you get in from a long ride, then this definitely fits the bill. As well as being super easy to whip up in the kitchen, it’s a great guilt-free alternative to a slice of cake!

After we made the batch, we thought about the concept of adding some banana to the recipe, so if you’re feeling adventurous try popping some in for some extra flavour.

Ingredients

– 1 cup of almond milk

– 4 eggs and 1 egg yolk

– 1 tbs of raw sugar

– 1 tbs of vanilla extract

– ½ a teaspoon of cinnamon

– 4 cups of cubed gluten-free white bread

– Banana (optional)

– Honey for drizzling

Method

Start by pre-heating the oven to 170 degrees and greasing an 8″ baking tray.

Then, in a small pan gently bring the almond milk up until just before it boils.

Next, whisk together the eggs in a large mixing bowl. Now add the warm milk, sugar, vanilla and cinnamon to the mixture and beat it until it has a light texture.

Then fold the bread cubes into the mixture and pour into the baking tray,

Pop into the oven for 30 minutes, or until golden brown on the surface.
