Recipe: Delicious Breakfast Fried Rice

Fried rice for breakfast is our new favourite thing

We know what you’re thinking: “Rice? For breakfast?” and we said the exact same thing – until we tried it. Now, we’re hooked on the stuff.

A bowl of breakfast rice in the morning is packed with slow energy releasing complex carbohydrates and fibre. It helps you feel fuller for longer, so you’re less inclined to reach for a mid-morning snack.

Like soup dishes, you can tailor make your breakfast rice bowl to include all your favourite foods – healthy, and otherwise. So long as you have the basics: eggs, rice and soy, you’re off to a flying start.

What’s great about this dish is that you can make extra portions to see you through lunch, and even dinner. Here’s a base recipe to get you started, with some tasty ideas for toppings.

Recipe: Breakfast Fried Rice

The basic ingredients here are eggs and rice – providing a healthy dose of protein and carbohydrate. Before you start adding fun and fancy toppings, you need to get these prepped.

You’ll need:

  • 50g of uncooked brown rice
  • 1 medium sized egg
  • 1-2 tbsp cooking oil
  • 1 tsp sesame oil
  • 1 tsp of light soy sauce

Note: These measurements are suitable for one to two servings, but you can alter them to suit your requirements.

Rinse through the uncooked rice and add to a pan of boiling water to cook. Usually 10-12 minutes, but check your rice packet for cooking information.

Once cooked, rinse your rice through with cold water and drain off as much water as possible. Set this aside for further cooling.

Grab a wok, or large frying pan and heat up with a teaspoon of your chosen oil. In a bowl, beat the egg until smooth. Once your pan is hot, pour in the egg and rotate the pan so the egg spreads out flat (like a pancake or omelette). Once the egg pancake begins to brown, take the pan off the heat and place the egg on a plate or chopping board.

When the egg has cooled, roll up and cut through so the egg is in strips.

Add the toppings

Now that you have the rice and egg ready for the main dish, it’s time to chop up and add the rest of your dish. For breakfast fried rice, toppings can include: peppers, sausage, tomatoes, mushrooms, bacon, onion and whatever else takes your fancy.

Here’s one of our favourite combinations:

  • 1 chopped red onion
  • 1 chopped red pepper
  • 1 chopped chorizo sausage

Wipe down pan from frying the egg, and add a teaspoon of cooking oil with a teaspoon of sesame oil. Heat the pan on a high heat, and add the chopped onions.

Once the onions begin to colour, add in the chorizo sausage and peppers. Cook on high heat for 30 – 60 sec whilst stirring (or flipping) throughout.

Once all the ingredients have mixed and began to colour, add in the cooked rice and mix well. Stir in a teaspoon of light soy for flavour, and then add in the egg.

Continue to cook, whilst stirring, for an additional minute so all the juices and oils can thoroughly blend together, then serve for a bowl full of noms.
